Apple and Sage Sausage Skillet with Roasted Vegetables
4-6 sausages (Premium Truly Irish Sausages)
2 medium apples, cored and sliced
1 large sweet potato, peeled and cubed
2 cups Brussels sprouts, trimmed and halved
1 red onion, thinly sliced
2-3 tablespoons olive oil
2-3 tablespoons fresh sage leaves, chopped
Salt and pepper to taste
1/4 teaspoon cinnamon (optional, for added autumn flavor)
1/4 cup chicken or vegetable broth
1 tablespoon balsamic vinegar (optional)
Step 1
Preheat your oven to 400°F (200°C).
Step 2
In a large bowl, toss the sweet potato cubes, Brussels sprouts, and red onion slices with olive oil, salt, and pepper. Spread them out on a baking sheet in an even layer.
Step 3
Roast the vegetables in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized. Stir them halfway through for even roasting.
Step 4
While the vegetables are roasting, heat a skillet over medium heat. Add a little olive oil if needed. Add the sausages and cook, turning occasionally, until they are browned and cooked through. This usually takes around 10-15 minutes, depending on the type and size of sausages.

Once the sausages are cooked, remove them from the skillet and set them aside.

In the same skillet, add the sliced apples and cook for a few minutes until they start to soften. Add the chopped sage and cinnamon (if using), and stir for another minute to release the flavors.

Deglaze the skillet by pouring in the chicken or vegetable broth and balsamic vinegar (if using), and scrape up any browned bits from the bottom of the pan.

Return the sausages to the skillet, nestling them among the apples and sage.

Once the roasted vegetables are done, add them to the skillet as well. Gently mix everything together.

Let the flavors meld together for a few minutes over low heat.

Taste and adjust the seasoning with more salt, pepper, or sage if needed.
