Christmas Sandwich with Truly Irish Traditional Rashers

Black Pudding and Apple Filo Parcels with Cranberry Dipping Sauce

4 slices of bread (choose your favorite type, like sourdough or multigrain)

8 slices of Truly Irish Rashers

4 tablespoons cranberry sauce

4 slices of cheddar or brie cheese

Handful of fresh spinach or arugula

2 tablespoons butter

Optional: sliced tomatoes or a fried egg for extra flavor

1. Cook the Rashers:
– In a skillet over medium heat, cook the Truly Irish Rashers until they are crispy and golden brown. Set aside on a paper towel-lined plate to drain excess oil.

2. Prepare the Bread:
– Butter one side of each bread slice.

3. Assemble the Sandwich:
– On the non-buttered side of two bread slices, spread a generous layer of cranberry sauce.
– Place a slice of cheese on top of the cranberry sauce on each slice.
– Layer the fresh spinach or arugula over the cheese.
– Add the cooked Truly Irish Rashers on top of the greens.
– If desired, add sliced tomatoes or a fried egg for extra flavor.
– Top each sandwich with the remaining bread slices, buttered side facing out.

4. Grill the Sandwich:
– Heat a clean skillet or griddle over medium heat.
– Carefully place the assembled sandwiches onto the skillet.
– Grill each side for about 3-4 minutes or until golden brown and the cheese has melted.

5. Serve and Enjoy:
– Remove the sandwiches from the skillet and let them cool for a minute.
– Cut each sandwich in half diagonally and serve warm.

This Christmas sandwich combines the savory goodness of Truly Irish Rashers with the sweet tang of cranberry sauce, making it a delightful treat during the holiday season. Feel free to adjust the ingredients to suit your taste preferences!
