Christmas Sandwich with Truly Irish Traditional Rashers
4 slices of bread (choose your favorite type, like sourdough or multigrain)
8 slices of Truly Irish Rashers
4 tablespoons cranberry sauce
4 slices of cheddar or brie cheese
Handful of fresh spinach or arugula
2 tablespoons butter
Optional: sliced tomatoes or a fried egg for extra flavor
Instructions:
1. Cook the Rashers:
– In a skillet over medium heat, cook the Truly Irish Rashers until they are crispy and golden brown. Set aside on a paper towel-lined plate to drain excess oil.
2. Prepare the Bread:
– Butter one side of each bread slice.
3. Assemble the Sandwich:
– On the non-buttered side of two bread slices, spread a generous layer of cranberry sauce.
– Place a slice of cheese on top of the cranberry sauce on each slice.
– Layer the fresh spinach or arugula over the cheese.
– Add the cooked Truly Irish Rashers on top of the greens.
