Grilled Truly Irish Sausages with Honey-Mustard Glaze and Grilled Veggies
One Pack of Truly Irish Premium Sausages
1/4 cup honey
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1 tablespoon olive oil
Salt and pepper to taste
For the Grilled Vegetables:
– 2 bell peppers (red, yellow, or green), sliced into strips
– 1 large red onion, cut into wedges
– 2 zucchinis, sliced into rounds
– 1 pint cherry tomatoes
– 2 tablespoons olive oil
– Salt and pepper to taste
– Fresh herbs (such as rosemary or thyme), chopped (optional)
- Prepare the Grill:
– Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.
- Make the Honey-Mustard Glaze:
– In a small bowl, whisk together the honey, Dijon mustard, whole-grain mustard, apple cider vinegar, olive oil, salt, and pepper. Set aside.
- Prepare the Vegetables:
– In a large bowl, toss the bell peppers, red onion, zucchinis, and cherry tomatoes with olive oil, salt, pepper, and chopped fresh herbs if using.
- Grill the Vegetables:
– Place the vegetables on the grill, using a grill basket if necessary to prevent smaller pieces from falling through the grates. Grill the vegetables for about 10-12 minutes, turning occasionally, until they are tender and slightly charred. Remove from the grill and keep warm.
- Grill the Sausages:
– Place the Truly Irish Premium & Traditional Sausages on the grill. Cook for about 12-15 minutes, turning occasionally, until they are evenly browned and cooked through. During the last few minutes of grilling, brush the sausages with the honey-mustard glaze, turning them to coat evenly.
- Serve:
– Transfer the grilled sausages to a platter and drizzle with any remaining honey-mustard glaze. Serve alongside the grilled vegetables.
