Halloween Sausage & Pumpkin Skewers with Truly Irish Premium Sausages
Ingredients
- 8 Truly Irish Premium Sausages
- 300g pumpkin or butternut squash (cut into 2-3 cm cubes)
- 1 red onion (cut into wedges)
- 1 bell pepper (cut into chunks)
- Olive oil
- Salt and pepper (to taste)
- 1 tsp smoked paprika (optional for extra flavor)
- Fresh rosemary sprigs (optional for garnish)
- Wooden or metal skewers

- Preheat the Oven
Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper. - Roast the Pumpkin
Toss the pumpkin cubes in olive oil, salt, pepper, and smoked paprika. Spread them out on the baking tray and roast for about 20 minutes, or until tender and slightly golden. Set aside. - Cook the Sausages
While the pumpkin is roasting, cook the Truly Irish Premium Sausages in a pan over medium heat for about 10-12 minutes, until they’re golden and fully cooked. Allow them to cool slightly before cutting each sausage into 3 or 4 bite-sized pieces. - Assemble the Skewers
Thread the sausage pieces, roasted pumpkin cubes, onion wedges, and bell pepper chunks onto the skewers. Alternate the ingredients to create colorful, spooky skewers. If using wooden skewers, be sure to soak them in water for 10 minutes to prevent burning. - Grill or Bake the Skewers
Brush the assembled skewers lightly with olive oil and place them on a grill or under the broiler for 5-7 minutes, turning occasionally, until the vegetables are slightly charred and the sausages are heated through. - Serve
Garnish the skewers with fresh rosemary sprigs for an extra spooky presentation, resembling twigs. Serve with a side of your favorite dipping sauce like garlic aioli, barbecue sauce, or a spicy ketchup.
