Truly Irish Pudding Croquettes

Truly Irish Black (or White!) Pudding Croquettes

 220g Truly Irish Black or White pudding, sliced thinly
 6 spring onions, trimmed & finely chopped
 150g potatoes, cooked & mashed
 2 tbsp. Irish mustard
 2 tbsp. malt vinegar
 Salt & freshly ground pepper
 About 225g flour
 4 eggs
 225g fresh white breadcrumbs
 Oil for frying

Step 1

Using a food processor, blend the sliced Truly Irish Black or White pudding, spring onions,potatoes, mustard and vinegar.

Step 2

Season and mould the mixture into oval shapes about 6 cm long, then roll in flour, then the lightly beaten eggs and finally the breadcrumbs.

Step 3

Shallow fry in plenty of hot oil until golden brown; drain on kitchen paper and keep warm.

Step 4

Serve with a salad garnish.

This recipe works with either Black or White Pudding.
