Truly Irish Rasher and Cheese Sandwich
For the Rasher (Bacon) and Cheese Filling:
8 slices of Truly Irish Traditional Cure or Beechwood Smoked Rashers
1 cup grated cheddar cheese
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon garlic powder
Salt and pepper to taste
For the Sandwich:
8 slices of your favorite bread
Butter for spreading (optional)
Lettuce leaves (optional)
– Sliced tomatoes (optional)
- Cook the Truly Irish Traditional Cure or Beechwood Smoked Rashers
– Heat a large skillet over medium-high heat.
– Add the bacon slices and cook until they are crispy and golden brown. This usually takes about 4-5 minutes per side.
– Place the cooked bacon on a paper towel-lined plate to drain excess grease. Once cooled, you can break the bacon into smaller pieces.
- Prepare the Cheese Spread:
– In a mixing bowl, combine the grated cheddar cheese, mayonnaise, Dijon mustard, garlic powder, and a pinch of salt and pepper.
– Stir until all the ingredients are well combined. Taste and adjust the seasoning if needed.
- Assemble the Sandwich:
– Take a slice of bread and spread a thin layer of butter on one side if you prefer. Alternatively, you can use the cheese mixture as the spread.

- Cook the Sandwich:
– If you have a sandwich press or a panini press, you can use that to toast the sandwich until it’s golden brown and the cheese is melted. This usually takes about 3-4 minutes in a preheated press.
– If you don’t have a press, you can cook the sandwich in a skillet over medium heat. Just add a little butter to the skillet and cook the sandwich for about 2-3 minutes per side until it’s crispy and the cheese is melted.
- Serve:
– Once the sandwich is cooked to your liking, remove it from the heat and let it cool for a minute or two.
– Cut the sandwich in half diagonally, if desired, and serve warm.
