Lite Truly Irish Breakfast Traditional Rashers & Poached Eggs

Truly Irish Traditional “Lite” Breakfast

 One Pack of Truly Irish Beechwood Smoked Rashers or Truly Irish Traditional Rashers
 4 medium eggs
 salt and freshly ground black pepper
 2 bagels, split in half
 knob of butter (optional)
 2 tbsp snipped chives

Step 1

Heat a non-stick frying pan, add the Truly Irish Rashers and cook until crispy, turning. Meanwhile, bring a frying pan of salted water to a simmer, carefully crack in the eggs and poach according to taste.

Step 2

Toast the bagels and keep warm. Butter the bagels and place a rasher on each side, place an egg on top. Scatter with chives, season and serve.
