Modern Twist on Traditional Irish Bacon and Cabbage
1 Truly Irish Bacon Joint
1/4 cup maple syrup
2 tablespoons Dijon mustard
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 teaspoon minced garlic
Salt and black pepper to taste
1 small head of green cabbage, sliced
1 pound baby potatoes, halved
3 carrots, peeled and cut into chunks
1 red onion, sliced
Fresh parsley for garnish
- Preheat the Oven:
Preheat your oven to 375°F (190°C).
- Prepare the Maple Glaze:
In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, apple cider vinegar, minced garlic, salt, and black pepper. Set aside.
- Prepare the Truly Irish Bacon Joint:
Place the Truly Irish Bacon Joint on a baking sheet lined with parchment paper. Brush the bacon joint with a generous amount of the maple glaze, making sure it’s well coated.
- Roast the Bacon Joint:
Roast the bacon joint in the preheated oven for about 25-30 minutes, or until the bacon is cooked through and has a nice caramelized glaze. Baste the bacon with the glaze every 10 minutes for an extra flavorful coating.
- Prepare the Vegetables:
While the bacon is roasting, toss the sliced cabbage, halved baby potatoes, carrot chunks, and sliced red onion in a large bowl with a bit of olive oil, salt, and pepper.
- Roast the Vegetables:
Spread the seasoned vegetables on a separate baking sheet and roast in the oven for 20-25 minutes, or until they are tender and slightly crispy at the edges.
- Serve:
Once the bacon and vegetables are done, slice the bacon joint into thick slices. Arrange the roasted vegetables on a serving platter, place the sliced bacon on top, and drizzle any remaining maple glaze over the dish.
- Garnish:
Garnish with fresh parsley for a burst of color and added freshness.
